I have to give an ode to The Pioneer Woman. I have no idea how the woman does it…. she has 4 children, helps tend to the family’s cattle ranch, is an amazing photographer, a wonderful cook, and a fantastic writer. That’s not what this post is about though. This post is about a recipe of hers I made last night. I’ve been obsessed with pepper jack cheese lately. Not sure why, and quite frankly I don’t think my waist line is loving this ridiculous cheese obsession, but I’ve been trying to find new recipes to use it in. Yesterday I stumbled upon Not Your Granny’s Mac and Cheese, and oh.my.word. It’s cheesy and a little spicy, and a whole heck of a lot yummy. I made a few minor alterations – namely omitting the jalepenos because C isn’t a fan, and I substituted 1% milk for the heavy cream (not because I’m trying to be healthy – what I didn’t have in cream I made up for in piles of shredded cheese – I just didn’t have any at home).
So good. I had leftovers for lunch and it was still just as freaking good. Go make some…. you’ll love me for it.
